How do I get Claude to stop being so polite? It uses too many 'I apologize' phrases.

Add a line to your instructions: 'Be direct and concise. Skip the apologies and pleasantries. If I ask for a correction, just give me the corrected version without any meta-commentary.' It makes it much more efficient.
